Those who know me well knows how much I don’t enjoy cooking (healthy or not!) as much I do baking. Not that I cannot cook, I just don’t have the patience with the peeling and slicing and grating, etc. etc. And not to mention the cleaning and washing! Ok, I do the same for baking, but at least no onion or garlic smell! LOL
Anyway, this year I decided to cook more. Truth is I get too bored with the ‘outside’ food and since I am also not getting any younger, health becoming top priority now. So one of my favourite go-to veggies meal would be this super-easy-throw-everything-in roasted veggies. I usually make this with roasted chicken as they both go into the oven at the same time.
Here’s what I used:
– Mix of veggies, I usually will buy whatever on sale that week. I think most veggies are nice roasted so it’s really up to the combination and creativity I guess. My favourites are broccoli, carrots, eggplant, zucchini, cherry tomatoes and sometimes potatoes
– Shitake mushrooms, diced -another of my favourite 🙂
– Red onions, diced
– Minced garlic
– Seasoning with salt, black pepper
– depending on my mood sometimes I would mix in some hot sauce
– extra virgin olive oil
That’s it! Just throw everything in (after washing all the veggies ya), mix in the oil and seasoning, done! Oh wait, bake for 20 minutes at 175 degree Celsius 😀
I like to make this on a Sunday as part of my meal prep for the week. Still trying to improve my meal prep variation so when I come across more that’s worth sharing, I’ll be sure to do so!
